Description

The hardest part about this recipe is the waiting!

Ingredients

  • 3 cups Sugar
  • 3 cups Water
  • 4 sticks Cinnamon
  • 10 whole Cloves
  • 12 ounces, weight Fresh Cranberries

Preparation

Prepare a simple syrup by bringing the sugar, spices and water to a boil, stirring occasionally until the sugar is completely dissolved. Pour into a glass bowl and add fresh cranberries. Cover and refrigerate overnight (or for at least 8 hours).

Drain syrup (keep for holiday cocktails or to sweeten hot tea) and spread cranberries on a waxed-paper-lined cookie sheet. Remove cinnamon sticks and cloves. Sprinkle with sugar and let air dry for 1-2 hours.

They will keep in the fridge for a few days…if they last that long! They’re not dried so they’re not like craisins. They’re more moist.

Interesting flavor and really pretty. They were still really tart even after soaking in the syrup and being sprinkled with sugar but maybe that was just that particular bag of cranberries. I’ll definitely make this again.
