Description

These rich, delicious flour-less cookies are a favorite in my family! I especially love how I can change them up to suit my mood just by using different colors of m&ms! Here I’ve used red and green for Christmas (of course!) but I’ve also done pink for a baby shower, orange and black for Halloween … you get the idea!

Ingredients

  • ½ cups Butter, Softened
  • 1 cup Sugar
  • 1-¼ cup Packed Brown Sugar
  • 3 whole Large Eggs
  • 1 teaspoon Vanilla Extract
  • 2 teaspoons Baking Soda
  • 1-¼ cup Creamy Peanut Butter
  • 4-½ cups Old Fashioned Rolled Oats
  • ½ cups Sweetened, Flaked Coconut
  • ½ cups Chocolate Chips
  • 1 cup M&Ms, Divided

Preparation

Preheat your oven to 325 degrees F.

Mix the ingredients together in the order listed, but reserve half of the m&ms. Drop by rounded tablespoonfuls or use a medium scoop onto a parchment-lined baking sheet. Flatten slightly with a fork dipped in cold water. Press a few of the reserved m&ms into the top of the cookies that have no m&ms showing.

Bake for 10-12 minutes, until barely golden brown around the edges. These cookies are best slightly under-done, so err on the side of taking them out too soon rather than letting them get overdone!

These are the best monster cookies I have found! I printed this recipe several years ago and make these all the time, for all occasions – And I can say that I have never had this recipe fail me and almost every time I make them I get a request for the recipe – thanks a bunch!!!!

This is the best Monster Cookie recipe that I have found. I only had about 3 cups of oatmeal, but it made them really chewy, yum!

Annalise ~ these were just fabulous! EVERY-one loved them…and asked for seconds…and I actually obliged since they had whole oats and coconut (and no refined flour)…lots of fiber, but lots flavor! I was even able to sub raw sugar for the white sugar and natural peanut butter for regular…they were still perfect and looked exactly like the picture…which doesn’t always work in a cookie. Thanks so much for sharing the recipe…it’s a keeper!

with all the ingredients going on in these… I would really say the best part about the coconut is the extra moist-ness and chewiness it brings. I totally get not finding the flavor in there, but it is definitely worth it for the texture!!

Oh, and for those who don’t think they like coconut… try adding it!! You won’t be upset!

I liked these, but even doubling the coconut I still thought it didn’t add anything which was disappointing. I would probably just leave it out if I make them again.

My favorite monster cookie recipe! I used gluten free oats and love that it’s naturally gluten free. :)

This is a perfect recipe and the coconut is what sets it apart. My kids are allergic to peanuts and tree nuts, so I substituted sunbutter for the pb and had no problems. Super soft and oh so deliciously dangerous. Unfortunately I down 6 cookies in less than 10 minutes. Thank you for sharing!
