A no-bake, make-ahead treat. Give as gifts in a pretty holiday tin.
Combine sugar, cranberries, dates, and eggs in a medium saucepan and cook, stirring constantly on medium low till pale in color and temperature has reached 170F, about 6 – 8 minutes.
Stir in walnuts, pistachios, pecans and rum extract. Let stand and cool about 45 minutes.
With damp or lightly oiled hands, roll into 1-inch balls, then roll in coconut and place on a waxed paper-lined baking sheet until set. Store in an airtight container in the fridge for up to one week or in the freezer up to 1 month.
