These Christmas Shortbread Cookies are simple, small, and the perfect accompaniment to a hot cup of coffee. With either the addition of festive holiday sprinkles or candied cherries, the shortbreads turn into the perfect Christmas cookie to share with family, friends, and Santa!
In a bowl, cream softened butter with powdered sugar until combined and fluffy. Gradually mix in flour, cornstarch, and vanilla. Mixture will need to be well-blended.
Using a 1-inch cookie scoop, roll dough into balls and place onto an ungreased baking sheet. With the tines of a fork, press lightly onto the tops of the balls to flatten slightly. Decorate cookies with sprinkles, or make small indentations and add halved cherries.
Bake at 350°F for 20–22 minutes or until bottoms of cookies are lightly browned. Cool 5 minutes before removing from pans to wire racks.
