Soft, chewy molasses cookies with a hint of gingerbread and topped with peppermint chocolate kisses!
Preheat oven to 375 degrees.
Mix flours, baking soda, and spices in a bowl.
Blend together sugar, brown sugar, and butter until fluffy. Add egg yolk, vanilla, and molasses. Slowly add dry ingredients until well combined.
Roll dough into 1-1/2 inch balls, roll in granulated sugar, and place 2 inches apart on a cookie sheet. Bake for about 11 minutes.
When cookies are done baking, stick a Kiss onto each and press in gently.

Brooke, I would try shortening the baking time next time perhaps. I realized recently that my oven’s temperature hasn’t been quite as accurate as I thought, so that could have contributed to the different texture I got! Not sure about tinfoil…

We made these this week. Yum! Mine turned out crispy too, so maybe next time I will shorten the baking time. I also cooled them on a cookie rack. Would cooling on tin foil help contain some of that moisture? I do that with other cookies that I bake. Any suggestions?

I just made these and they are awesome. I had to use light brown sugar and regular kisses. My raw dough balls may have been closer to 2 inches, but they came out really soft and chewy on the inside. They are to put in tins for the Sunday School teachers. I hope the chocolate kisses set back to stack without squishing.

I am really excited to bake these, but I am also wondering if they freeze well.

These look really awesome — I am going to make them this weekend! I love those peppermint kisses. I would love to try something with the candy corn kisses at Halloween. Those are so addicting.
