A good old fashioned refreshing Caribbean drink made from the bark of a mauby tree.
Wash mauby bark, getting rid of any stones or debris that may have been missed in packaging. Add mauby, cinnamon and aniseed to pot. Add water to pot about 1 inch above level of mauby barks. Bring to a boil and turn off heat. Leave to steep for 3 hours or overnight.
Cool, strain and pour mixture into an airtight bottle. Store the concentrate in the fridge.
To drink, use 1/2 cup concentrate and 3 to 4 cups water, to taste. Sweeten as desired. You can also add a little lime juice and a few dashes of Angostura bitters.
