Enjoy this tangy, yet slightly sweet and definitely refreshing drink at your next get together. It’s especially fun in the Fall when you are missing Summertime and when the pomegranates are fresh in the store.
Rim glass with lime juice and dip in mojito sugar (can be bought in most grocery stores now).
Then, in a tall glass (pint glass works well) put:
Juice from 1/2 a Lime
2 Tbls Sugar
Handful of Mint Leaves (left whole or ripped up)
*Optional: Add a few pomegranate seeds (or leave out if you want a classic mojito)

Muddle/Smash together at the bottom of the glass
Fill glass with ice

Pour on:
1 oz Light (white) Rum
1 oz Pomegranate Juice (or replace this with any type of juice you like…pear is yummy too)…or just leave this step out if you want just a plain classic mojito.
Fill the rest of the glass with Club Soda
STIR WELL to dissolve sugar and garnish with a sprig of mint. Serve with a cocktail straw for stirring.

I can hardly wait to try these! I had a pomegranate mojito in a bar once and it was delicious and $14 (gasp) per drink! I’ve been looking for a recipe for a while! Yay!
