Have extra fresh peaches?? This is an absolutely wonderful drink that combines fresh peaches and champagne. Takes a little effort and time to make but so well worth it!
Combine the peaches, sugar, and lemon juice in a sauce pan. Bring to a boil, stirring almost constantly, until it boils and the sugar is dissolved. Reduce heat to low, cover and cook for 15 minutes. Remove from heat, allow to cool. Once it’s cooled, pour the mixture through a strainer set over a pitcher and discard the solids. Chill the liquids.
Pour as much (or as little) in the bottom of a champagne flute and top with chilled champagne. Refrigerate the remainder.

I was curious about what type of champagne should be used.
