Light, minty and refreshing for Derby Day or any hot summer evening!
For the mint simple syrup: Add the water and sugar to a medium saucepan. Bring to a boil, stir and let the sugar dissolve. Remove from heat, add the mint and let the syrup mixture steep until cool. Remove the mint and store the syrup in the fridge until ready to use.
For the drink: Fill a small glass with crushed ice, pour the bourbon and simple syrup over and stir with a long handled spoon. Allow glass to sit and frost over. Add a straw and snip it short, add the mint sprig next to the straw so you can smell the mint while you sip!
