Ultra sweet and tropical tasting, lychees are a great way to celebrate summer—or reminisce about it when it’s over.
Lychees are a small, ultra sweet summer fruit that are also available canned year-round if you’re making this drink when they’re out of season.
To make the lychee puree, simply peel, pit and puree fresh lychees. They are very juicy so you don’t need to add liquid and it will take about 2 to 3 lychees to make an ounce of puree. If you’re using the canned variety, do not include the syrup.
Once you have the puree, combine all the ingredients in a cocktail shaker with ice cubes and shake well. Pour into a chilled cocktail glass and garnish with a lychee.
