I now keep a Mason jar of honey sage syrup in the fridge. These are so stinkin’ good!
For the syrup:
Combine water, honey, and sage leaves in a small saucepan over medium heat. Stir, smashing the sage, until the honey is dissolved. Cool completely.
For the cocktail:
Combine gin, syrup, and orange juice, and divide among ice-filled glasses. Garnish each cocktail with a sage leaf.
Note that I use a clover honey that is light in flavor. If you’re using a very sweet variety like wildflower honey, you may need to use less for the syrup.
