Instead of the usual heavy, high-calorie dessert, try this summer healthy Korean dessert drink traditionally served after meals.
In a large pot, add water, ginger and cinnamon sticks. After it comes to boil, reduce heat and simmer for 30 minutes. Liquid color should turn dark burgundy in color. Strain and discard ginger and cinnamon sticks.
Add brown sugar while hot so sugar dissolves. Add dried figs. Let liquid sit in pot until room temperature. Transfer to a large glass jar.
Store in refrigerator until cold. Serve cold. When ready to serve, add pine nuts.
