Description

A refreshing way to end the day, Citrus Margarita with Candied Orange Peel Salt Rim

Ingredients

  • FOR THE SALT MIX:
  • 2 whole Oranges
  • 1-½ cup Water
  • 1-½ cup Sugar
  • _____
  • FOR THE MARGARITA:
  • 2 Tablespoons Salt
  • 1 whole Lime, Sliced In Half
  • 1 cup Tequila
  • ½ cups Grapefruit Juice
  • ½ dashes Orange Juice
  • ⅓ cups Lime Juice
  • ½ cups Cointreau
  • 2 cups Ice Cubes

Preparation

For the Candied Orange Peel Salt Mix:
Cut off top and bottoms of oranges. Peel oranges and remove pith from the inside of the rinds. Cut rind into strips. Place water and 1 cup sugar in saucepan over medium heat. When sugar has dissolved add orange strips and let the mix come to a boil. Boil for 15 minutes. Remove strips and drain well. Toss strips in the remaining 1/2 cups sugar and allow to dry overnight on cooling rack.

The next day… Add candied orange strips to food processor with the 2 tablespoons of salt. Pulse until you reach your desired, grainy texture. Rim your glass with the mixture before pouring in your margarita. Store remaining mixture in an airtight container.

For the margaritas:
On a small plate spread salt mixture. With lime or orange wedges moisten rims of 6 ounce glasses. Dip glasses into candied orange peel salt mix. Place glasses into freezer to chill.

In a pitcher combine tequila, grapefruit juice, orange juice, lime juice and Cointreau. Remove chilled glasses from freezer and pour margarita mixture over ice. Serve!
