This is a double recipe for larger crowds. Delicious!
Stir together sugar and rum. Let sit for a few hours to dissolve.
In a separate bowl, whisk egg yolks slowly until they are pale yellow and thick. Add the yolks slowly to the rum and sugar mixture. Let stand one hour.
Whip heavy cream until it reaches a shaving cream consistency, and then add to eggnog just before serving.
Makes approximately 32 extremely rich and delicious 4 oz. cups.
