Originally called a Milano-Torino (for the Campari from Milano and the Cinzano Vermouth from Torino), this Italian cocktail quickly became the favorite of American tourists seeking relief from prohibition-era deprivation. It has a sophisticated bitter edge, a refreshing fizz and the pleasing hint of citrus.
Fill a rocks or highball glass 3/4 full with ice. Add Campari and Italian vermouth. Top with approximately 2 ounces of Pellegrino water, or to taste. Stir and finish the aperitivo with either a lemon twist or a pulpy orange wheel. Serve at once.
