Description

Oh so good brownies with yummy extras to fulfill any sweet tooth.

Ingredients

  • FOR BROWNIES:
  • ½ cups Vegetable Oil
  • 1-½ cup White Sugar
  • 2 teaspoons Vanilla Extract
  • 2 cups Flour
  • ½ cups Unsweetened Cocoa Powder
  • 1-½ teaspoon Baking Soda
  • 1 teaspoon Salt
  • 2 cups Shredded Zucchini
  • ½ cups Chopped Maraschino Cherries
  • ½ cups Mini Marshmallows

  • FOR FROSTING:
  • 6 Tablespoons Unsweetened Cocoa Powder
  • ¼ cups Margarine
  • 2 cups Confectioners Sugar
  • ¼ cups Milk
  • ½ teaspoons Vanilla Extract

Preparation

1. Preheat oven to 350 degrees. Grease a 9×13 baking pan.

2. In a mixing bowl, mix together oil, sugar and 2 tsp vanilla until blended well. Combine flour, 1/2 c. cocoa, baking soda & salt; stir into the sugar mixture.

Fold in zucchini, cherries & marshmallows. Spread evenly into the pan.

3. Bake about 35 minutes, until brownies spring back when touched.

4. FROSTING: mix together 6 tbsp cocoa, margarine, confectioners’ sugar, milk and 1/2 tsp vanilla. Pour frosting over cooled brownies and then enter bliss with every bite.
