I have served this zucchini crisp to people & they think I’m joking when I tell them it was made from zucchini. They are just SURE it is apple crisp. Really! It’s true! I took it to the ice cream social at church last weekend & didn’t tell them until the next day that my “apple crisp surprise” was really zucchini crisp. One lady said, “No way! It even looks like apples!”
It also smells so wonderful while it is baking.
Preheat oven to 375.
Prepare the pastry by combining the flour, sugar, and salt in a large bowl. Cut in the butter or margarine until crumbly.
Press half the mixture in the bottom of a greased 9×13 pan. Save the other half of the mixture for later.
Bake for about 10 minutes, then remove from oven and set aside.
Cut the zucchini in slices about the size of apple slices.
In a sauce pan, cook the zucchini in lemon juice until tender, about 10-15 minutes.
Add the sugar, nutmeg, & only 1 teaspoon of the cinnamon. Simmer for a minute or two.
Now add a half cup of the saved pastry mixture. Simmer until this thickens, stirring constantly.
Let cool, (I didn’t) & pour the zucchini mixture over the crust.
Mix 1/2 t. cinnamon with the rest of the pastry mixture in a bowl then sprinkle it over the zucchini.
Bake for 35-45 minutes, or until lightly browned.

This zucchini crisp really does shock people. They really do think it’s apple crisp.

This is great! You would never guess that it is zucchini and not apples. You could also do a combo of apples & zucchini.

This is a keeper! I use an electric roaster in the patio to bake goodies in the summer, and this turned out wonderful. I didn’t have any vanilla ice cream, but that would’ve been perfect on it.
