Description

Baked summer fruit with a crunchy golden topping.

Ingredients

  • 4 whole Peaches, Cut Into Eighthes, And Then Again In Half
  • 2 cups Strawberries, Each Cut Into 4 Pieces
  • 2 cups Cherries, Pitted
  • 2 Tablespoons White Sugar
  • 1 Tablespoon Cornstarch
  • 1 cup Brown Sugar
  • ½ cups All-purpose Flour
  • ½ cups Rolled Oats
  • ½ cups Sliced Almonds
  • 1 teaspoon Cinnamon
  • ¼ teaspoons Salt
  • 1 stick Unsalted Butter, melted

Preparation

Preheat the oven for 375 degrees.

Cut up the fruit, add cornstarch and white sugar and toss it all together in the dish that you will be baking everything in.

It a separate bowl, mix together the oats, flour, brown sugar, almonds, cinnamon, salt.

Melt the butter in the microwave and add it while still warm to the oats mixture.

With a fork, mix together until everything is coated by the butter. Crumble the oats mix on top of the fruit and make sure it is all spread evenly over the fruit.

I would put the baking dish on top of a cookie sheet when baking, just in case of any overflow. Bake about 50 -55 minutes.

NOTE –

Now I used white peaches because that was what we had in the fridge but feel free to use yellow, or any other variation of peaches. Also if you don’t have a cherry pitter, don’t worry about keeping the fruit whole. Just cut the cherries in half and remove the pits manually, which is what I did. You could easily substitute any of the fruits in this recipe for something else depending on what you have on hand. Just make it a summer fruit, such as any type of berry, plum, peach, nectarine, fig. Using frozen fruit isn’t a problem; just let it thaw out before using.
