This yummy dessert was served at Warrensburg-Latham High School in Warrensburg, IL when my dad went there in the mid ’70s. A generation later, they were still a huge hit when I was in high school. The recipe was scaled-down to a family-sized recipe and reprinted in a local cookbook. I want to share this local favorite with the world. Thank you to all the wonderful lunch ladies who have served this over the years!
Cream together butter and sugars until fluffy. Add in the egg and mix well. Mix in peanut butter, soda, and vanilla. Finally, add flour and oats. Press with hands into a large jelly roll sheet (I use a 12″x17″). Bake at 350ºF for 15-20 minutes until golden brown. I tend to underbake at around 16 minutes for gooey bars.
For the frosting:
Heat peanut butter, milk and vanilla in a saucepan until mixed. Stir in dry ingredients and spread on bars. Enjoy!
