The final product resulted in something similar to a chess pie, but less sweet. The apple cider vinegar lends a citric taste to the filling, which works well with a buttery, flaky crust. Vinegar Pie is a perfect dessert for last-minute company, or just for those nights where a slice of pie is a must.
1. Preheat oven to 350 F.
2. Place rolled-out pie crust dough in a lightly buttered pie dish. Set aside.
3. Sift together sugar, flour and salt in a small bowl.
4. In a separate bowl, whisk together eggs, butter and half-and-half. Add sugar mixture and stir well. Add apple cider vinegar and stir vigorously with a wooden spoon until thick and smooth. Pour filling into crust.
5. Place pie on the bottom rack of the oven. Bake for 10 minutes at 350 F. Reduce heat to 325 F and bake until edges rise and center is fairly firm, about 35 to 45 minutes. Place on a cooling rack and serve at room temperature.

Coincidentally, I made my first chess cake yesterday and found too sweet for me (but my family loved it). This pie is probably more my style. Thanks for the recipe.
