A yummy crisp with lots of topping that is easily adapted for crab apples by adding a little sugar. This is a big hit in the fall with all my friends and family.
1. Preheat the oven to 375F.
2. In an 9×9 pan, mix together the lemon juice, apples and cinnamon.
3. In a medium bowl, mix together the flour, brown sugar, oatmeal and margarine/butter to form a crumb-textured mixture.
4. Top the fruit with the crumb mixture and tap it down gently. (My family likes a lot of topping; you may want to use less topping.)
5. Bake in the preheated oven for about 35 minutes. The top with become brown and firm, while the filing will have a syrup that is bubbling around the edges.
6. Let cool slightly and serve. This goes really well with a vanilla ice cream or frozen yogurt.
