A healthy, creamy summer treat! Makes about 6 cups.
In a high powered blender, blend cashews, water, coconut oil, maple syrup, vanilla, lemon juice, a handful of the cherries (just to give the desired pink color) and a pinch of salt on high until cashews are no longer gritty. This will take roughly 2-5 minutes. Next, stir in the remaining cherries and dark chocolate by hand. Pour into your prepared ice cream maker and churn according to manufacturer’s directions. Serve and enjoy!
