Description

Triple chocolate and it’s good for you. That is all.

Ingredients

  • 1 cup Oat Flour
  • ¼ cups Almond Flour
  • 4 Tablespoons Vanilla Whey Protein Powder
  • 4 Tablespoons Chocolate Whey Protein Powder
  • 3 Tablespoons Unsweetened Dark Cocoa Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 1 whole Egg
  • 2 Tablespoons Liquid Egg Whites
  • ¼ cups NuNaturals Stevia Baking Blend
  • ⅓ cups Unsweetened Applesauce
  • ¼ cups Plain Greek Yogurt
  • ¼ cups Almond Milk
  • 3 Tablespoons Walnuts, Chopped (optional)
  • 3 Tablespoons Dark Chocolate Chips (optional)

Preparation

Preheat oven to 350 F and grease an 8 x 8 baking dish. Set aside.

Combine oat flour through salt in a large bowl, set aside.

Combine egg, egg whites and Stevia and whisk together until fully incorporated in a medium bowl. Add remaining wet ingredients (applesauce through milk) into the medium bowl and whisk together.
Pour wet ingredients into dry ingredients and add in chocolate chips and walnuts if using.

Pour batter into the baking dish and bake for 20-25 minutes until a toothpick inserted comes out clean. Remove from the oven and let it cool completely in the pan. Then cut into 9 squares, wrap them individually and store in refrigerator.

Notes:
– You can use all oat flour if you don’t have almond flour. I just ran out of oats and had to improvise.
– Use any sweetener you like, it doesn’t have to be Stevia. Adjust measurements as necessary.

*Each piece is about 145 calories with 10g of protein including the walnuts and chocolate chips.

Inspired by Jamie Eason’s chocolate protein bars.
