A bar cookie, simple to make, with a wonderful crispness. Perfect for bake sales, classroom treats or holiday platters. It can be baked in a 9×13 pan, for a thicker cookie base. My mom used to have these ready for us when we got home from school, and it was my favorite after-school treat. It was one of the first things I learned to bake as a small girl.
Preheat oven to 375F. Lightly grease cookie sheet.
Cream shortening, sugars, egg and vanilla on medium speed, until smooth. Add flour and oats, mixing well. Press mixture onto cookie sheet. Bake for 15 minutes or until golden brown.
While cookie is cooling, melt chocolate and butter in microwave on high, stirring every 30 seconds until smooth and creamy. Be careful not to overcook it in the microwave. Spread over the warm cookie crust, then sprinkle with nuts.
Let cool until chocolate is almost firm, then cut into serving sizes. The best tool for cutting is a pizza cutter, however, a sharp knife will work well, too. Store in an airtight container.

I made these yesterday and my hubby has eaten half the pan! I did make a few changes though I thought I’d share. When the cookie crust was warm, I added those new caramel bits and let them melt a few minutes. Then I drizzled the chocolate over and then added salty chopped up peanuts. It tastes like a PayDay candy bar. We love it – especially the hubs! Thanks for sharing!

I made these today and they are so yummy! The cookie crust is buttery and nice. The chocolate is so smooth on top. Yum!
