Description

These adorable little Tiramisu cups are the perfect dessert for entertaining. And not to mention, it’s the best Tiramisu ever!

Ingredients

  • 8 ounces, fluid Strong Coffee (I Used 2 Nespresso Long Espresso Shots)
  • 7-½ Tablespoons Sugar, Divided
  • 1 Tablespoon Rum Liqueur (I Used Vana Tallinn Estonian Liqueur)
  • 8 ounces, fluid Heavy Whipping Cream
  • 1 teaspoon Vanilla Sugar
  • 2 whole Egg Yolks
  • 8 ounces, weight Cream Cheese, Softened
  • 1 whole Egg White
  • 1 pinch Salt
  • 18 whole Lady Fingers (I Used Bonomi)
  • 2 teaspoons Cocoa Powder

Preparation

Brew your coffee and add 1 tablespoon of sugar and the rum liqueur. Set aside.

Place whipping cream in a bowl and whip until it forms stiff peaks. Slowly add your vanilla sugar or add vanilla extract and sugar to your liking. Cover and set aside in the refrigerator.

For the filling: In a mixing bowl, beat together the egg yolks with 5 tablespoons of sugar until mixture is white and fluffy. Add the cream cheese and beat until the mixture is smooth and creamy. Set aside.

In another mixing bowl, beat the egg white with the salt until stiff peaks form. Slowly add 1.5 tablespoons sugar. Fold this mixture into the above cream cheese mixture. (Folding the egg whites in will keep the composition light and fluffy!)

Using a food processor blend the lady fingers until you get a fine crumb.

Now you are ready to assemble. Place about a teaspoon of crumbs at the bottom of each small dessert cup. Spoon coffee over the crumbs until fully coated. Layer some of the cream cheese mixture on top. Repeat this for another layer. For your last layer add crumbs and top with coffee one more time but top with whipped cream and dust with cocoa powder.

Cover and store in refrigerator until ready to serve.
