What’s a girl to do when you can’t find a Girl Scout? Improvise!
1. Preheat oven to 325ºF.
2. Line an 8×8 baking dish with baking paper or foil so that it overlaps and hangs over the sides or grease the heck out of the pan if you prefer.
3. Mix butter and sugar.
4. Add cocoa powder and mix until well combined.
5. Add vanilla, salt and eggs and mix well.
6. Gently fold in the flour until just combined.
7. Mix in the chopped thin mints.
8. Bake for 40-50 minutes. I used glass, and checked them at 40 minutes and they weren’t quite set yet . They were definitely bordering on overdone by 50.
10. Cool in the pan then eat your heart out.
