Wondering what the secret ingredient is? Well, it’s sweet potatoes! It’s just one way to get those veggies in your kids’ bellies. The cookie batter marries well with the sweet potatoes that you almost forget that they are in there somewhere!
Preheat oven to 350 degrees Fahrenheit.
In a large bowl cream together butter, sugars, vanilla, and sweet potatoes till smooth. Add 2 cups of flour, then stir. Then add salt and baking powder, stir until well incorporated. Then add the remaining 2 cups of flour to the cookie mixture.
Stir with a spoon until there are no more lumps and it has a smooth texture. Add chocolate chips and stir to incorporate them well into the cookie batter.
Spread out cookie batter onto a greased cookie or matted cookie sheet. Bake for 20 minutes then check to see if they are fully done in the middle. If not, continue baking 5 minutes at a time, inserting a toothpick to check for doneness. They should be a dark cinnamon color and the toothpick should come out clean.
Cool, cut, and enjoy. Enjoy that your kids are eating veggies in their cookies!
Note: These are really good. The brown sugar hides the sweet potatoes pretty well, and they add just a special something to make these cookie-bars something that your kids will beg you to make again and again!
