If you love grapefruit…you will love this pie! The more fresh the fruit, the yummier the pie.
1. Peel and section 3 grapefruits. Remove membranes from sections and break into chunks. Drain well (reserving juice). Set aside.
2. Mix corn starch and sugar in saucepan.
3. Add grapefruit juice(from step 1) to saucepan and stir. If you do not have enough juice, add water to make the full 1 1/2 cup of liquid.
4. Cook the corn starch, sugar and juice mixture over medium heat until thickened, stirring regularly.
5. Remove from heat and cool.
6. Gently fold the grapefruit chunks into the cooled, thickened juice mixture and pour into a baked pie crust.
7. Allow to set before serving.
This pie is delicious in either a traditional pastry pie crust or a graham crumb pie crust. Equally delectable with a meringue top!
