This is a quick and easy treat that will cool you down in a flash!
Add apricots, sugar and lemon juice into a food processor or blender. Process until smooth, about 45 seconds to 1 minute. Add yogurt and process until all is combined, about 30 seconds. Pour into an ice cream freezer and follow directions. Serve immediately or store in a covered container until ready to serve. Makes about 1 quart.

hmmm I want to make this. can I sub peaches if I cant find local apricots? I guess I can. thanks!
