Description

A yummy fall recipe, that even your kids will eat! Even if it is veggies!

Ingredients

  • 2 whole Large Sweet Potatoes
  • ⅔ cups Sugar
  • ¼ cups Butter, Softened
  • ¼ cups Karo Syrup
  • 3  Eggs
  • ¾ cups Milk
  • ½ teaspoons Salt
  • 1 teaspoon Vanilla
  • ¼ teaspoons Nutmeg
  • ¼ teaspoons Allspice
  • ½ teaspoons Cinnamon
  • 1 whole Unbaked Pie Crust

Preparation

Bake 2 large sweet potatoes (at 400F for about 45 minutes or until soft – depending on the size of the potatoes). Remove from the oven and mash them (you should have about 2 cups worth).

Combine mashed sweet potatoes, sugar, butter and syrup in a large mixing bowl. Add eggs one at a time, beating after each addition.
Blend in milk, salt, vanilla and spices.

Pour into an unbaked pie crust. Bake at 425F for 10 minutes; then turn oven down to 325F and bake for 1 hour.

Just tried this the other night, and while I may not have had the potatoes as mashed as they could have been, it was a really good pie. The little chunks were actually kinda good in it!

I made this Sweet Potato Pie yesterday at my 15-year-old granddaughter’s request and it was well-received by all. It’s delicious and reminds me of sweet potato pies I had growing up. The recipe is easy to assemble and bakes into a beautiful pie. It puffed up quite a bit while baking and shrunk back down a little after cooling. This is a perfect pie!
