Sweet Potato Pie!
Cook potatoes in a pot of boiling water until tender, about 15 minutes. Drain and cool. Put your pie crust into a pie pan and set aside.
Heat oven to 375ºF.
In a large bowl mix together the eggs, syrup and 1/3 cup sugar. Beat in the potatoes, spices, salt and half-and-half until smooth. Spoon into the pie shell.
Bake for about 50 minutes or until set.
Melt margarine in a small saucepan over medium low heat. Once melted, add add nuts and remaining sugar. Stir and cook until sugar is melted. Carefully spoon over top of pie and let cool completely before slicing.
