Sweet potatoes in brownies? Yes! Try these healthy but decadent tasting treats and you’ll be a believer!
Preheat oven to 350ºF. Spray an 8 inch by 8 inch baking pan (see note below) with oil.
Whisk together dry ingredients. Stir together wet ingredients. Stir wet and dry together. Add in chocolate chips and nuts, if desired.
Spread the batter in prepared baking pan. Smooth top.
Bake 20 to 25 minutes, until middle is set. Cool completely before serving.
Note: double this recipe for a 9 by 13 inch pan.

Thanks for the comments – perhaps a little clarifying is needed. The sweet potato needs to be roasted until very soft and then well mashed to a soft puree. You could use a sweet potato roasted in a 350 degree oven for about an hour, or until very soft, and then well mashed. Mashed canned sweet potatoes work very well for this. I think canned pumpkin would work well for this recipe also. Thanks so much for your comments!

I just put them in the oven and am excited to find out what happens. But also a bit concerned. I used baked smashed sweet potatoes but the batter didn’t even come together – I had to almost double the sweet potatoes and add applesauce before it began to look like any sort of brownie batter.
Am i missing something in the directions?

Wow, this doesn’t even call for any eggs? Do you think pumpkin would be a good substitute for the sweet potatoes?
