Description

My tasty lemon bars have a buttery shortbread crust, a sweet and tart lemon filling and a generous sprinkling of confectioners’ sugar!

Ingredients

  • FOR THE CRUST:
  • 2 cups Flour (unbleached Or All-purpose)
  • 1 cup Butter, Very Cold
  • ½ cups Confectioners Sugar
  • FOR THE FILLING:
  • 3 whole Eggs (large)
  • 1-½ cup Granulated Sugar
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Salt
  • ⅓ cups Lemon Juice, Fresh Or From Concentrate
  • 1 Tablespoon Lemon Zest
  • 3 Tablespoons Confectioners Sugar

Preparation

For the crust:
Preheat oven to 350ºF and grease a 9 x 13 baking pan. Set aside.

Place the first 3 ingredients into a food processor and pulse until the butter is pea-sized. Pour the mixture into the greased baking pan. Cover it with a sheet of wax paper (to keep it off your hands) and press it across the bottom of the pan until even and firm.

Bake at 350ºF for 15 minutes. Remove from oven and set aside. Note: At this point the crust will not be completely baked. Keep the oven on.

For the filling:
Place the remaining ingredients, except for the confectioners’ sugar, into a mixing bowl. Beat on low speed until blended and then beat on medium speed for 3 minutes. Pour the filling over the hot crust.

Place it back in the 350ºF oven and bake for an additional 20–25 minutes, or until the filling doesn’t jiggle. Remove from oven.

Cool the bars completely before dusting with confectioners sugar and cutting into bars.
