Simple, cool and lightly sweet, this pie is the nicest way to end a hot August day. You will want more than one piece!
In a medium size saucepan, combine sugar, cornstarch and water until smooth. Cook and stir over medium heat until bubbly and thickened. Remove from heat, stir in the Jello mix until dissolved. Cool the Jello mixture while you layer the sliced peaches into your pie crust. I may use more than 3 cups as I love peaches. Pour cooled filling over peaches and chill until set, about 2 hours. Can serve whipped cream or ice cream with this pie if desired.
