What to do with all those strawberries you picked? Strawberry Sorbet! This is the smoothest recipe I have made.
1. Puree strawberries in a food processor until smooth.
2. Stir sugar into the strawberries. Cook over medium heat in a saucepan until bubbly and simmer 1-2 minutes.
3. Stir the cornstarch and water together separately. Stir it into the strawberry mixture.
4. Remove pan from heat and stir in lemon juice.
5. Cool in the refrigerator and then follow your ice cream maker’s instructions. I have a Cuisinart ice cream maker that creates the sorbet in 20-25 minutes.
Makes about 1 quart.
