Description

Amazing little strawberry lemon oat blondies are such a fresh and simple treat with all of their bright summer flavors! So perfect for a snack or dessert.

Ingredients

  • 1 cup All-purpose Flour
  • ¾ cups Old Fashioned Oats
  • 1 pinch Salt
  • 8 ounces, weight White Chocolate Chips
  • ¾ cups Strawberry Jam
  • 6 Tablespoons Butter
  • 1 cup Granulated Sugar
  • 4 whole Eggs
  • ½ cups Fresh Lemon Juice (from About 3 Lemons)

Preparation

Preheat oven to 350ºF and spray an 8 x 8 baking pan with cooking spray.

Whisk flour, oats and salt in a bowl and set aside. Fill a small pot halfway with water and bring it to a gentle simmer on the stove. Combine white chocolate, strawberry jam and butter in a heatproof bowl and place it above the simmering water to melt everything together, stirring often with a heat proof utensil. Once it is all melted and smooth, set aside for a minute to let it cool a bit.

Set up a stand mixer with the paddle attachment and combine sugar and eggs in its bowl. Beat thoroughly until pale and airy. Slowly pour in melted white chocolate and strawberry mixture and let it completely get beaten in. Pour lemon juice in. Turn speed to low and slowly add dry ingredients until you have a smooth batter.

Pour the batter evenly into the baking dish and bake for 55–60 minutes, until golden brown on top and a toothpick comes out cleanly. Let completely cool, then cut blondies into 16 equal squares. Serve immediately and enjoy! They also keep well for a couple of days sealed up.
