This is a recipe for a clear, fruity glaze for use in fresh fruit pies, tarts, eclairs, etc. You can also use other flavors of gelatin for other fresh fruit pies; such as peach, raspberry, etc.
Bring 3 cups water and sugar to a boil, stir until dissolved.
Combine remaining water and cornstarch until smooth, add to boiling syrup and cook and stir until thickened and clear.
Stir in gelatin powder until dissolved. Cool and use for fresh strawberry pie, tarts, eclairs, etc.
NOTES : You can also use other flavors of gelatin for other fresh fruit pies; such as peach, raspberry, etc.

I’ve used this same recipe for a few years now and it’s wonderful!
Our absolute favorite is fresh peach pie with a shortbread crust. Fabulous!
