This strawberry pie is a very old recipe that, according to my mother, my grandma used to make all the time. When my mom pulled it out from her recipe collection, a yellowed index card with the recipe printed via typewriter, I had to laugh. I’m usually pulling up recipes on my iPad or iPhone. Just like the card it was printed on, this pie is very retro and very simple. It also does not require you to turn on the oven!
In a large bowl combine cream cheese, sugar, vanilla and cinnamon, mixing until well blended. Set aside.
Mash 1 cup of strawberries with a fork and stir it into the cream cheese mixture. Set aside.
In a medium-sized bowl using a mixer with the beater attachment, whip the cream and confectioner’s sugar until stiff peaks form. Fold this into the cream cheese mixture. Spoon into the prepared pie crust.
Chill several hours or overnight. Garnish with additional strawberries just before serving!

sorry for the typos… had to mention that now my son doesn’t want anything to do with girls, they’re icky!! I’m sure it won’t last long, but for now i’m his girl : ) Happy cooking and thanks!!

I LOVE the story behind it. I am a big fan of handed down recipes. I’m trying to find some really good recipes for my boys that are tried and true. I’ve already had one son, who was probably about 8 tell me that when he marries I have to give this cookie recipe to his wife, that makes me happy…. Hey grandma were (are) good cooks afterall : )
