So what do you do when you have cream cheese icing left over from making Red Velvet Moon Pies and shredded coconut left over from making coconut shrimp? And not to mention it’s strawberry month? Well, you find a quick and easy little sweet treat to fix. This is so simple I almost feel guilty making a post out of it. But it was so tasty I just had to share!
Dump the coconut in a shallow bowl and fluff up with a fork. Wash the strawberries and remove the leaves. Cut strawberries in half lengthwise. Spread enough icing on the exposed cut side of the strawberry to cover it. Dip the icing side of the strawberry into the coconut and set it on a serving plate. Repeat until you’ve used all of the ingredients.
