A fresh tart strawberry filled with sweet cream cheese frosting sounds just right!
First mix the frosting together. Start by whipping the butter and cream cheese together until nice and creamy. Then add your powdered sugar a little at a time and mix this together until light and fluffy. Finally add the vanilla extract and lemon zest and mix this in. Set this aside while you prep your strawberries.
Give all the berries a good scrub and cut the bottom (stem end) off so they sit up nice and straight. Then cut a plus sign (+) about ¾ of the way through the top of the strawberries. This is where you are going to pump the frosting inside the strawberry so be sure to not cut all the way through.
Once all your strawberries are cut and ready, scoop the frosting into a piping bag with a round tip. Now gently insert the tip of the piping bag into the strawberry and pipe the frosting in.
I like to display them in mini muffin paper liners just to make them extra cute! Enjoy!
