A two layer bar with a sugar cookie crust and a creamy spiced apple cider filling then finished with a light dusting of powdered sugar.
Preheat the oven to 350 F. Combine 2 cups of flour, confectioners’ sugar and butter in a bowl. Stir to moisten. Press the mixture into the bottom of a 9×13 inch pan that you’ve lightly sprayed with cooking spray. Bake for 20 to 25 minutes or until the crust is lightly brown.
In a medium bowl combine the remaining flour, baking powder, cinnamon and allspice. Set aside. Whisk together the eggs, sugar, and cider in another smaller bowl. Stir the sugar mixture into the flour mixture. Pour over the prepared crust and spread it out. Bake for 25 minutes or until set. Remove from oven and cool on a wire rack. Dust lightly with confectioners’ sugar then cut into bars.
