Description

Soft, tender spice cake, swirled with cream cheese and milk chocolate chips. Mmm. Makes a jellyroll-sized pan of bars.

Ingredients

  • FOR THE CAKE:
  • ½ cups Salted Butter
  • 1-½ cup White Sugar
  • ½ teaspoons Vanilla
  • 2  Eggs
  • 2 cups All-purpose Flour
  • 1-½ teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • 1 teaspoon Cinnamon
  • 1-½ teaspoon Pumpkin Pie Spice
  • 1-¼ cup Buttermilk, Sour Milk, Or Just Milk
  • FOR THE CREAM CHEESE SWIRL:
  • 8 ounces, weight Cream Cheese, Softened
  • ½ cups White Sugar
  • 1  Egg White
  • 1-½ cup Milk Chocolate Chips

Preparation

1. Make the cake: Beat together butter and sugar on high for about 30 seconds, until combined. Add vanilla and eggs, one at a time.

2. Stir together the dry ingredients. Then in 3 alternating additions each, add the flour mixture and the milk. (So add a little milk, then a little flour, then a little milk, then a little flour, etc).

3. Pour into a greased jelly roll pan. Now prepare the cream cheese swirl. Beat together the cream cheese, sugar, and egg white until combined. With a spoon or a pastry bag, drizzle the cream cheese around the cake. Then take a knife and swirl it around (not to much though, it’ll start to mix in). Then sprinkle with the chocolate chips.

4. Bake in a 350ºF oven, for about 25-30 minutes, until a toothpick inserted in the center comes out clean. Let cool, slice, and serve.

Wow! Delicious! I will certainly make these again. There were simple but the flavor is amazing! Thanks for a great recipe.

I thought they were good, not what I was expecting. My boy’s didn’t care for them though :-(. I am not sure what I could do to make them more appetizing.
