This hot chocolate is inspired by the Spanish hot chocolate usually served with churros. It’s perfect for dunking, or just “eating” with a spoon. By using good, dark chocolate and almond milk thickened with a cornstarch slurry, it actually tastes much more indulgent than it is!
Place 1/2 cup milk in small bowl and whisk in the cornstarch. Set aside.
Heat the remaining milk in a small saucepan over medium low/medium heat. Add the chocolate and whisk until melted. Add the cornstarch and milk mixture and stir for a few minutes, or until the hot chocolate has thickened.
Add a small pinch of salt. At this point, taste the hot chocolate and add sugar if desired.
