A light, fluffy strawberry confection. It’s a hit with kids and high-school football coaches alike!
In a large bowl, dissolve the Jell-O in the 2 cups boiling water. Add the frozen strawberries (which can be in syrup or not), stirring until fruit separates and mixture thickens.
Meanwhile, in a separate bowl, whip the heavy cream till whipped-cream consistency is reached (you also could do this step first). Fold the marshmallows and whipped cream into the Jell-O mixture until no streaks remain.
Put mixture into a 9-by-13-inch pan, then chill in the fridge (I usually make this the night before I want to serve it, and refrigerate it overnight).
