Baking peaches and nectarines is a great way to enjoy a healthy, guilt-free summertime dessert. In this recipe, I bake the fruit with honey and rosemary, then top with mascarpone, pecans and additional drizzled honey.
Preheat oven to 350 F. Slice fruit into wedges and place in a single layer in a baking dish (a medium sized oval baker), then top with the vanilla, sliced butter and rosemary springs. Drizzle honey over entire dish.
Bake uncovered for 15 minutes, then remove dish from oven and spoon the liquid in the dish over the fruit.
Bake for 15 additional minutes then immediately serve, topping each serving with mascarpone, additional drizzled honey, pecans and rosemary garnish.
