Description

This is a combination of a rhubarb pie recipe I have been eating for years and an apple pie topping I recently enjoyed. The combination is heavenly.

Ingredients

  • 3 cups Rhubarb (frozen Is Okay)
  • 1 cup Sugar
  • 3 Tablespoons Flour
  • Salt To Taste
  • 2 Tablespoons Butter
  • 1-½ cup Flour
  • 1 cup Oats
  • 1 cup Brown Sugar
  • ½ cups Butter

Preparation

1. Combine first 4 ingredients in a bowl, then transfer them to an 8″ square baking dish. Lay chunks of the butter in several places over the rhubarb mixture.

2. Make the topping. Combine 1-1/2 cups flour, oats, and brown sugar. Cut 1/2 cup butter into the dry combination. Lay crumble on top of the rhubarb and butter chunks.

3. Bake at 400 degrees for 40-50 minutes. If the top starts to burn you can cover it lightly with foil.

This is the BEST rhubarb dessert that I’ve ever had! I never grew up with rhubarb, but if you are into sweet and tangy, this is the dessert for you! I did double the filling, too many people! And did not double the topping because, well, frankly, I forgot to! And I only put half the brown sugar because, well, I ran out! But this was definitely a keeper – I’m not even looking for any more rhubarb recipes for my 4 or 5 plants growing out back! The winner has been found!
