These no-bake cookies rely on real butter for their velvety texture. You’ll struggle to wait until the cookies harden before you have a taste!
1. Slowly melt butter in a medium saucepan (5 quarts works well; anything smaller would be too small). Add vanilla, milk and sugar. Turn up heat to medium-high and stir until boiling. It’s very easy to burn, so be vigilant!
2. When mixture begins to boil, remove from heat and add peanut butter with a spoon or spatula. It’s helpful if you have one person to spoon out peanut butter while another stirs.
3. After peanut butter is melted, add oats a cup or two at a time. Stir until all oats are covered in the peanut butter mixture.
4. Dollop the peanut buttery oats onto a sheet of wax paper or aluminum foil, or spread to a thickness of 1/2″ on a cookie sheet and cut into bars after cooling.
