Delicious and creamy dessert for two!
In a sauce pan over medium heat, add raspberries and sugar. Cook fruit until thick and broken down, about 5 minutes. Pour through a mesh sieve over a bowl; discard seeds. Allow to cool.
In a mixing bowl, add softened cream cheese and fold in whipped cream (I use Cool Whip but any will work). Gradually add raspberry sauce and fold into mixture to combine. Transfer into dessert cups evenly and refrigerate until ready to serve.
Best served chilled. Drizzle with chocolate syrup if desired.
