When I’m craving ice cream and the freezer is empty of it, this is what I make. I like to add various goodies to it, such as Nutella, peanut butter, crushed cookies, nuts, crushed graham crackers, etc. The last time I made it, I added 3/4 cup of pumpkin puree to it. Delicious!
Stir together cold milk, vanilla, condensed milk, pumpkin puree, pumpkin pie spice and salt in a medium bowl. Set aside.
Beat the heavy cream in a large bowl with an electric mixer until stiff peaks form. Fold the milk mixture into the whipped cream.
Pour in a shallow 2-quart dish, cover and freeze for 2 hours. Remove from the freezer and stir and mix up the hardened edges. Return to the freezer for another 2 hours until frozen. Allow to sit out for a few minutes to thaw a bit before serving
Note: You can use whatever add-ins you like. I’ve used 2 to 3 tablespoons of Nutella, 3 to 4 crushed Oreos, 3 to 4 crushed graham crackers and a handful of chocolate chips. Or, just make it as good old plain vanilla.

i NEED this in my life right now…i’m dying for a taste of the holidays, and ice cream would really hit the spot in this 90-degree weather. time to call my sister to see if she still has her ice cream maker!

Just made this, and it’s just like pumpkin pie…yum! I think it would be really good smashed between two ginger cookies.

question: have you made this in an ice cream maker before? I’m guessing I’d need to skip the cream-whipping part???

This sounds delicious!! My husband is diabetic so I can’t use the sweentened condensed milk. Is there anything that I could use a substitute?
