Description

These delicious, moist cake bars are an autumn staple at our house — but my kids request them all year long because they are so delicious! Enjoy!

Ingredients

  • FOR THE BARS:
  • 1 cup Oil
  • 4 whole Eggs
  • 2 cups (Total 16 Oz.) Pumpkin
  • 2 cups Sugar
  • 2 cups Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • ¼ teaspoons Cloves
  • 2 teaspoons Cinnamon
  • _____
  • FOR FROSTING:
  • 3 ounces, weight Cream Cheese, Softened
  • 6 Tablespoons Butter, Softened
  • 1 Tablespoon Milk
  • 1-¾ cup Powdered Sugar

Preparation

Beat oil, eggs, pumpkin and sugar in a large bowl.

Add flour, baking powder, baking soda, salt, cloves and cinnamon to the pumpkin mixture and mix well.

Pour into a greased jelly roll pan. Bake at 350 F for 25 to 30 minutes. Cool.

For frosting, combine cream cheese, butter, milk and powdered sugar and beat well. Spread over bars.

Serve immediately or refrigerate until serving time.

*I use 1 16-oz. can of pumpkin.

I made these this weekend and they were great! I did not have enough sugar so I added a half of a cup of brown sugar and they still tasted good!

These were so simple to make, my 4 year old helped. We followed the recipe exactly. They tasted great!

I will second that WOW. I made these over the weekend for a supper with family, and used half whole wheat flour, half white flour. It was amazing how delicious they were, and how many bars the recipe made! I am now making them as a cake this weekend for my son’s first birthday party. YUM!

WOW.

I first tried this recipe last fall, and I’ve come back to it 15 or 16 times since. It is a total HIT with my friends, families, and coworkers! I’ve been linking people to this recipe over and over again. They’re so moist and flavorful and delicious!

I split the batter into 2 9×13 cake pans so I could cover them and travel with them, and it worked great!

I can’t say enough about this recipe. People drool over these bars!!
